Gluten is a mixture of 2 Proteins present in cereal grains such as Wheat, Barley, Rye, Oats, Semolina, Spelt, Couscous, Bulgur. It’s also what gives the elastic texture in dough, acting as a “GLUe” that holds food together. Many people have as severe reaction to Gluten and this is named under three things: Coeliac Disease & Gluten Allergy & Gluten Sensitivity. Coeliac Disease is a serious autoimmune disorder that can occur in people where the intake of gluten causes damage in the small intestine.
